3/3 cup of pinhead oatmeal.. {ground type not porridge oats}
...3 onions finely chopped ..
1..tsp salt..1 tsp.freshly ground black pepper..
1/2 tsp cayene pepper
..1/2 tsp..fresh nutmeg..
3/4 cup of good lamb stock..

Wsh lungs and stomach well rub with salt and rinse,remove membranes and excess fat ..soak in salted water for several hours.Turn stomach inside out for stuffing...
Cover heart and liver with cold water.Bring to boil,reduce heat cover and simmer 30 minutes.Chop heart and coarsley grate liver.Toast oatmeal in dry pan stirring often, until golden.Combine all ingreds and mix well loosely pack into stomach until 2/3rds full remember oatmeal expands in cooking!..Press any air out of stomach and truss securely.Put in boiling water to cover Haggis and simmer for 3 hours uncovered,adding more water as needed to maintain the level..Prick stomach several times with sharp needle as it begins to swell; this stops bag from bursting when ready place on a hot plate and serve with mashed tatties {potatoes} and neeps {turnip}, with a nip of good single malt whisky..
